Spiced Bean Burger

What better way to get your daily serving of veggies and protein but by whipping up some spiced bean burgers? They’re even great frozen when you’re in a time crunch and need a quick and nutritious dinner. You can eat them with or without bread (pictured is a carb-free version) or in a wrap or between burger buns. They’re also very affordable and they’ll be a crowd pleaser at any get together or holiday party. Follow the steps below and you’ll have yourself a quick, comforting and filling veggie burger!

Ingredients:

  • 1 can black beans

  • Half of a green pepper

  • ½ cup of quinoa- cooked

  • ½ an onion

  • 2 garlic cloves

  • 1 tablespoon cumin

  • 1 tablespoon chili powder

  • Teaspoon red pepper flakes

  • ½ cup of breadcrumbs- to hold it together

  • ½ of a avocado

  • 5 cherry tomatoes

Instructions:

  1. Put all vegetables and beans in food processor and chop until fine

  2. Place chopped veggies in a mixing bowl, add quinoa and bread crumbs and mix all ingredients thoroughly

  3. Make desired sized patties, similar to the ones you get at a diner

  4. Add tablespoon of olive oil to pan, cook each side of the burger for 2 to 3 minutes

  5. Serve your finished burgers over some lettuce, on a burger bun or in a wrap!

  6. Add hot sauce, ketchup or mayo if you want an extra kick

  7. Slice avocado and tomatoes and top your veggie burger with an extra touch of freshness and sprinkle with a touch of salt, pepper and red pepper flakes for flavor!

Tip: If you’re not vegan, add a fried egg on top or a thick slice of cheese.
