What Did One Lentil Say To The Other?


This is my favorite soup. It is filled with everything you need to have a well rounded meal - lentils, potato and spinach. And it is easy to make to boot!

Ingredients:

1 small onion 1 clove of garlic 1 carrot 1 celery stalk 2 yukon gold potatoes 1 cup green lentils 1 cup fresh spinach 3 cups of filtered water or vegetable stock Salt, a big pinch

  1. Dice the onion, carrot, celery, and potato. Press the garlic.

  2. Water or oil sauté the onions. When just softening, add the garlic. Add the carrots, celery and potatoes. Season with a pinch of salt.

  3. Add the lentils and mix around.

  4. Cover with water or stock and bring to a boil. Reduce to a simmer and cook until the lentils and potatoes are soft enough to eat. Right before you are ready to serve, stir in the spinach and let it wilt. Enjoy!
