It's A Tuscan Season!


I love Tuscan kale for this recipe, sometimes called dinosaur kale for the ripply texture and dark green color of the leaf, but any kale will work!

This is an absolute go-to recipe at my house, it's cheap and fast and so healthy. When you massage the kale with salt, yes, really ... put your hands in it and rub all the salt around, it breaks down some of the harder parts of the leaf, the result is tender little kale bites.

1 bunch kale

1/2 tsp salt

juice of 1 lemon

flesh of 1 ripe avocado

1 heaping tbs nutritional yeast 1 pinch cayenne pepper (or to taste) Pull the kale leaves off the stems, and wash thoroughly and shake off excess moisture. Add salt and lemon juice, and massage together. Wait about 5 minutes for leaves to get soft and darker in color. Scoop out the avocado meat. Add avocado, nutritional yeast, and cayenne to salad, and massage together (yes, again!) to blend.
