Summer Cherry Crumble

Nothing says summer like fresh cherries! Not only are they in season, but they’re packed with many beneficial nutrients. They’re one of the only fruits with melatonin, which helps those who have trouble sleeping and they’re loaded with potassium and beta carotene. Crumbles can be made with any fruit you desire, so add or subtract ingredients to make it your very own. If you want to make a crowd pleasing dessert, follow the recipe below!

This recipe was inspired by English food blogger, Deliciously Ella.

Ingredients for the topping:

  • 1 cup of gluten free rolled oats

  • 1 cup of almond flour

  • 4 tablespoons of maple syrup

  • 3 tablespoons of coconut oil

  • 2 teaspoons of cinnamon

  • 1 tablespoon of hemp seeds

  • 1 tablespoon of chia seeds

The fruit:

  • 3 cups of fresh pitted cherries

  • 1 tablespoon of maple syrup

  • 1 teaspoon of cinnamon

  • ½ teaspoon of fresh nutmeg

  1. To make the crumble layer, combine the oats and almond flour.

  2. In a small saucepan, combine the maple syrup, coconut oil and cinnamon and heat until melted. Add this to the oats and almonds along with the chia and hemp seeds.

  3. Place the cherries in a large saucepan along with the maple syrup, cinnamon and nutmeg. Cook these on the stovetop for about 2 minutes. Let this sit for another few minutes until the cherries and liquid mixture thicken.

  4. Then, place the cherries in a 11x7 baking dish (or something similar). Place the oat mixture on top and put in the oven for 20-25 minutes or until the top is golden brown.

  5. Serve on it’s own or with some vanilla ice cream and enjoy!
