Refreshing Radish and Spinach Salad

This is the first year since I was a kid gardening with my mom that I've had room to grow anything, I planted radishes just so that I could make this salad. In a sunny spot radishes grow incredibly fast, so in a summer you might be able to get 2-3 harvests if you keep resowing. As soon as these little guys looked ready, I ran to the store to get my spinach!

This is the most rewarding salad, and so simple to put together. Light and healthy with so few ingredients it can be a go-to, on the fly meal. Each bite has the perfect combination of sweet, sour, bitter, and salty. The proportions are funny because each radish and avocado, etc, are different. Visualize each bite having a bit of each component on the fork and your quantities (and sizes) will be correct.

Ingredients: 2 lb Baby Spinach 1 handful cilantro leaves, pulled off the stems 3 radishes, thinly sliced 1 avocado, sliced juice of 1 lemon drizzle of olive oil salt and freshly ground pepper to taste Toss ingredients together and enjoy!
