Ingredients:

  • 1 cup (dry) oatmeal (old-fashioned oats)

  • 2/3 cup coconut flakes

  • 2/3 cup chopped walnuts

  • 1/2 cup peanut butter or almond butter

  • 1/2 cup ground flax seed

  • 1/2 cup dark chocolate chips or cacao nibs

  • 1/3 cup maple syrup

  • 1 tablespoon chia seeds

  • 1 tablespoon hemp seeds

  • 1 teaspoon vanilla extract

  • 2 tablespoons protein powder (vanilla or chocolate)

Directions:

  1. Add all the ingredients into a large mixing bowl and stir until thoroughly combined. Cover and chill in the refrigerator for 30 min to an hour depending on how impatient you are.

  2. Roll into balls, about an inch to two inches big. Roll and cover bites with coconut flakes.

  3. Store in an airtight container for up to a week, but I’m sure they’ll be gone before that.
